Steamed Mussels Three Ways

My daughter was lucky enough to spend three days with her grade school at an outdoor education camp this week, which meant The Boy had free reign in the meal planning department. What did he do with this great new power?

He asked for mussels.

I’m not kidding.

One of the earliest videos we have of the kids is The Boy moving in on a bowl of curried mussels when he was about three. He pulled one open, checked it out and then cautiously ate it. He was an instant convert and an eating machine, reaching into the bowl again and again until they were almost all gone.

His sister? Not so much. She’s a great eater who will try just about anything, but she’s no a fan of bivalves.

It’s a bit of a shame that she doesn’t dig mussels as they are an inexpensive, sustainable, easy to cook option that’s also fun to eat.

Mussels also lend themselves to all sorts of great flavours from beer to white wine to curry. No matter the flavour, the ratios and the approach remain largely the same: sauté aromatics in olive oil or butter until translucent, add any additional spices/ herbs, and finish with a liquid brought to the boil that the mussels will cook in. Once your liquid comes to a boil, add the mussels and occasionally, carefully, shake/ stir the pot. The mussels should be cooked in about 7 minutes.

You’ll want about 10 ounces/ 250 grams of mussels per person (4lbs should be more than enough for a family of four).

Ladle the mussels and cooking broth into shallow soup bowls. Serve with a baguette and a green salad to make it a quick, easy, delicious meal.

1 Onion, chopped
2 cloves minced garlic
3 cloves minced garlic
1 tablespoon grated ginger
1/2 an onion, chopped
1 leek sliced
2 cloves minced garlic
 2 tablespoons chopped fresh dill 1 tablespoon mild Thai red curry paste
 200 mL white wine  400 mL coconut milk 355 mL beer
