March Break Nachos

I’m almost embarrassed to call this a recipe. It really just has two ingredients and is so easy to make. It’s also hearty, satisfying and a perfect-in-a-pinch March Break snack. You know, the kind you need when you’re entertaining a bunch of kids and they are suddenly all hungry at once!

I just take my kids’ favourite crackers—Almond Nut-Thins—and put a handful of them in a microwave-safe bowl. I top with a few pinches of low-fat shredded mozzarella cheese and microwave for about 25 seconds or until the cheese melts. The crackers stay crisp and my kids (and their friends) quickly gobble up this crunchy ooey-gooey snack. If you’re concerned about nut allergies, substitute with rice crackers instead.
