Apple Cinnamon Snacks

It’s hard to find a kid’s snack that tastes good, is easy to make and is nutritious. I recently experimented by adding a few ingredients I had on hand in my pantry, and voila! Homemade apple cinnamon bars.

3 cups dried apple chips

1/2 Tbsp cinnamon

1/2 cup dates (remember to remove the pits!)

1/2 cup dried apricots

1/2 cup mixed nuts and seeds (I used the protein power booster blend but you can use all almonds or walnuts or half almonds and half sunflower or pumpkin seeds—whatever you have on hand is generally what I use!)

Blend on a higher and higher speed for about 30 seconds, or until the ingredients are combined and start to stick together.

Line a baking pan with parchment and press the contents of the blender into a pan. Keep pressing until the entire pan is covered and you have an even layer.

Refrigerate for 30 minutes minimum and then cut into bars.
